another crock pot recipe

Okay, so the Thrifty Thursday was about Crock Pot meals.  Since I'm just blogging about my life here, you *know* I had a meal in the crock pot today, right?!  Not only that, but I did it early enough to have it for LUNCH, not dinner.  Well....a *late* lunch, but lunch nonetheless.

Here's the recipe:

Crock Pot Hamburger Casserole


into greased CP, slice up the following:
a few potatoes (fairly thin and they'll cook faster - I used about 5 sm. ones)
a few carrots (I used three med. ones, but I'd use more next time)
a med. onion (I love it, but if you have picky eaters, I'd chop this instead of slice it)
a few celery stalks (again, I used three)
S&P to taste


top w/ one pound of ground beef, browned
then cover with tomato sauce (I used a 15 oz. can - it actually only called for 8oz)


I cooked mine on high for a few hours, then low until lunch time.  
I added a bit more S&P and it was great!  Add a bit of fresh-out-of-the-oven homemade bread.....mmmmmm, a perfect meal!!

**Now, I *really* enjoy this type of down-home, family meal.  I'm TEACHING my family to like them as well.  My dh is willing to try most anything I put on the table.  My kids are learning to at least TRY stuff and be willing to admit their tastes might change, so they have to try something each time I make it.

At least I have Talitha & Elijah - seriously, they'll eat anything!  I hope Micah picks up his eating habits from them!!

This sounds so good! I am a big fan of crockpot recipes. I will be trying this when it cools down here in Texas!

Delish...I love and ADORE my crock pot!!! this looks yummy...my mom made this sort of dish when we were younger with a can of green beans added, minus the potatoes and we ate it over mashed potatoes...YUMMM! Don't you LOVE Fall foods? mmmm I'm making snack Tues. a.m. for b. study, pumpkin bread, zhuc. bread, apples and caramel dip and heading out for the M & M's too! yummm haha
